Bring the sauce to the boil and simmer very slowly for an hour and 15 minutes (do not boil hard!!).
If you want it moderately spicy, add 2 peppers, if you want it really flaming, add 3 or 4 peppers.
After 45 minutes, blend it with a hand blender until you get a nice smooth sauce.

- 250 grams Tomato Ketchup
- 2-4 Madame Jeanette peppers without seeds and seed ribs
- 120 ml water
- 70 ml Red wine vinegar (apple cider, white wine or natural vinegar can also be used)
- 60 grams of brown caster sugar
- generous teaspoon of black pepper
- generous teaspoon of onion powder
- large teaspoon of mustard (seed) powder
- juice of half a lime
- 1/2 tablespoon Worcestershire sauce
